Bread is as basic to Jersey Soul Food as the ground you stand on, yet taken for granted by many. Do it well and you’re an artist; don’t do it well and you’re labors will end up with the other stale bread on sale at Shop Rite. Firm crust, insides nicely perforated with air bubbles thanks to the yeast, when you poke it it shouldn’t compress like a wet cotton ball; just like a good pal in a fist fight it comes back and stands its ground.
